simple wraps

Ezekiel tortillas (6 to a package)
red pepper humus or a ripe avocado or cashew butter or sesame seed butter
8 oz tempeh, chopped and sauted, optional if it’s too hot
1 can black beans, well rinsed, or 2 cups of cooked bulk dry black beans
1 red pepper, chopped finely
1 carrot, grated coarsely
1/2 red onion, chopped finely
1 cucumber, peeled and chopped
1 tomato, chopped finely
1 bunch cilantro or parsley, chopped

Chop and saute tempeh. Spread 2-3 T humus, or ripe avocado, or nut butter on each tortilla. Chop and then mix all veggies and the beans in a large bowl. Spoon veggie/bean mixture onto tortilla, fold bottom 1/5 edge upwards, then wrap both sides to the middle to create a hand-held wrapped delightful lunch or dinner on a hot day. Will keep in airtight container for 3-4 days. Together with a cold six-pack of IPA, serves 6 happily.
